Rationale for Grades Given

The chef gave us a tour of the kitchen and dining hall when looking at the school. There is a food allergen station where there is not a chance for cross contamination. Chefs and staff are trained for allergen food handling. If someone is not, they find someone who is. You can request allergen free food to be made for you if you can't find something on the menu you like. You can also request to take a loaf of bread back to your dorm room or other favorites you may want. Chef Dan is really accommodating and helpful. He makes sure eating in the dining hall is safe for you.

Very: React to small amounts

Celiac's and casein and whey milk proteins. Nothing causes anaphylaxis but can cause immediate digestive distress.

Yes. They have a form you fill out. You will need documentation from your doctor.

I met with the chefs.

If you were in charge of dining, what would you change? Would your school be open to suggestions?

They are definitely open to feedback and suggestions. Chef Dan wants to make sure you can eat safely and have food you like. He'll order a favorite brand if they don't carry. He's really good about picking good tasting brands for breads and cheese. He stays on top of it.

Describe your biggest challenge managing your food restrictions at college and how you deal with it

I don't always speak up if I don't see what I want out. Either im in a rush or I don't want to bother anyone. That's on me.

Advice for Incoming Students:

Housing:

Did your food restrictions impact your housing decisions?  Any dorm recommendations

No. Each roommate can have own fridge in you want a dedicated one. I like living in campus apartments so I can make own foods if I want. My favorite to make in apartment is eggs and bacon.

Dining Halls:

Any advice for managing dining halls?  Favorite dining halls? Any to avoid?

Just one dining hall and a cafe on campus. Both great about labeling and accommodating. The off-campus towers don't have many options for eating allergy free in that building.

Meal Plans:

Describe your meal plans over the year(s). What's mandatory? Any suggestions? 

The meal is unlimited. You can eat all day if you like.

Dorms:

Any advice for eating in the dorms? Favorite snacks? Places that deliver? 

Grocery stores and Walmart nearby to get snacks. Chick-fil-A, Burgatory other fast food nearby.

What should students do before school starts or when they first arrive?

Meet Chef Dan. Check out dining hall. Molly in disability services is very helpful.

Socializing:

Advice on managing parties or dinners out with friends?

You know your allergens. Educate your friends if needed. Especially if you need an epi pen. Everyone seems to know someone with allergies or have themselves. Speak up for yourself so you don't get sick. Don't be embarrassed or feel bad, even though you will at times.
