Celiac Disease

Student's Summary Assessment:

College Dining:

Surrounding Area:

B+

Rationale for Grades Given

Little to no options, i usually end up eating from a vending machine. There are also no microwaves available so bringing food from home is also difficult.

Restaraunts in the area are great and have options. Chipotle is close and will deliver to the school, however the delivery people often get confused with finding the buildings so it takes time away from studying (sometimes over an hour on multiple occasions) to try and figure out where the delivery person is to be able to direct them to you.

Details About this Student's Food Restrictions

How many years ago were you diagnosed with food allergies or celiac disease?

5+

If you indicated celiac or gluten intolerance, how sensitive are you to gluten?

Very: React to small amounts

Add details to help us better understand your food restrictions (e.g. sensitivity level, potential reaction, need for EPI pen)

Brain fog, poor balance, joint pains, headaches, skin rashes, nausea, stomachaches. A very tiny amount of gluten can cause an unpredictable combination of these reactions for a few days to a few weeks

Details About this Student's College Dining Experience

Does your college handle food restrictions as you expected when you decided to attend?

Mostly what I expected

Have you had a reation from eating in your dining hall?

NO

If Yes, describe each incident and how your school responded

Did you register your food restriction with the disabilities office? If yes, describe

No, unaware if this is even an option here

Are there resources to help with nutritious, safe dining (e.g. dietician)? If yes, describe

No

If you were in charge of dining, what would you change? Would your school be open to suggestions?

More options, considering the keto diet crazes out there, I am surprised there aren’t more carb-free options.

Describe your biggest challenge managing your food restrictions at college and how you deal with it

The fact that I simply don’t eat while on campus, or I will order food from nearby restaraunts, which gets expensive and wastes time with either delivery, or picking up the food
