We bake with Authentic Foods GF Classical Blend (amazon) and Annalise Robert's cookbooks. Keep the flour in tupperware in freezer with some room to shake up well before using. Spoon into measuring cups to keep air in the flour. You need to add xanthan gum to most recipes, so we keep it in the freezer. We use Pamela's pancake mix for some recipes, like heartier muffins. Trader Joe's gf baking flour is in our freezer for less delicate cooking needs.
